"For this exclusive collaboration with Cupra, I wanted to design a pastry that challenges visual codes while retaining absolute and uncompromising deliciousness. The design of the entremet is directly inspired by the sharp, sleek, and futuristic lines of the brand's logo. In terms of flavors, we sought power: an intense dark chocolate mousse with 64% cocoa, supported by the rustic crunch of an almond-hazelnut praline and the comfort of an ultra-soft biscuit. It's a creation with character, vibrancy, and a lot of elegance." — Jeffrey Cagnes

The tasting experience at the Cupra City Garage:
The intensity of this chocolate entremet calls for a sharp contrast. Our barista suggests pairing it with a Specialty Double Espressoor a Cold Brew (cold-infused coffee). The citrus notes and natural acidity of a grand cru coffee awaken the deep cocoa of the 64% mousse and balance the richness of the praline.

This dessert is best enjoyed chilled to appreciate the contrast in textures between the crispy shortbread and the silky mousse.

The perfect temperature:For the 64% dark chocolate mousse to release its full aromatic power and for the ganache to be perfectly melty, take the dessert out of the refrigerator about 10 minutes before serving.
