The spirit of creation: "Lemon pie is a monument of pastry, but I wanted to infuse it with an unprecedented, almost Mediterranean, vegetal freshness. Instead of the traditional yellow lemon, I chose the wild vibrancy of lime. To bring roundness and complexity to the palate, we make a textured lime confit with fresh chopped basil and a drizzle of exceptional extra virgin olive oil. This creates an incredible aromatic bridge with the ultra-light whipped ganache. Jeffrey Cagnes reinterprets the traditional lemon tart in a signature version of spectacular freshness. On a perfectly crisp shortcrust pastry rests a smooth creamy wild lime filling. At its heart, a lime confit married with fresh chopped basil and a drizzle of olive oil brings a fruity and herbaceous roundness of great elegance. The whole is topped with a cloud-light lime whipped ganache, shaped like a flower with surgical precision.
